Responding to chef René Redzepi’s design brief for ‘something uniquely Australian’, a textural palette including monoliths of rammed earth, timber and glazing coalesce to deliver concepts of land and water. Native materials and processes were specifically developed with local suppliers and makers to mimic Noma’s cultivation process, to create a truly colloquial dining experience.
