The fitout is founded on two main precedents: the grand brasseries of Paris and the classic North American steakhouse. Lighter and softer than its Melbourne and Sydney counterparts, the Perth fitout features a long, tranquil entry inspired by the candle-lit, stone cellar of a traditional European Chateau. A large dining room celebrates the theatre of the open kitchen at the centre of the space, contrasted by second area with lowered ceilings, providing a series of intimate dining lounges.
