The existing structure, interior and fittings were retained where possible in St Judes Cellars. Local, recycled furniture, fittings and materials were preferred, and finishes and paints were only applied to surfaces when absolutely necessary. Gas heating was installed, as well as evaporative cooling, assisted by ventilation and ceiling fans. Lighting is only required at night, as the skylight provides ample natural light, and even then is solely on the tables. Extensive planting throughout the space provides a natural atmosphere for customers and employees.
